Cut pineapple into wedges and arrange decoratively on a serving plate.

Put sugar and salt in a mixing bowl and mix completely, tasting until flavor of salt comes through but does not overpower sugar. With your hands (with or without gloves, but be sure to wash your hands well after handling chili) mash in peppers, spreading flavor throughout the mix until it has a strong, hot bite.

Transfer to a decorative bowl, garnish dip with a whole chili or two, and serve with pineapple.
