4 slc Bacon cut in small pieces
1 lrg Onion sliced
4 slc Canadian bacon cut in small pieces
4 x Green peppers cut 1/2" wide strips
28 oz Canned tomatoes drained and mashed
1 x Garlic clove crushed
1/2 tsp Salt
1/4 tsp Freshly ground pepper
2 tbl Fresh bread crumbs
1 tbl Butter
8 x Eggs slightly beaten
Instructions:
Instructions: Heat bacon in large, heavy skillet. Add onions and cook until they become transparent. Add Canadian bacon, peppers, tomatoes, garlic, salt, and pepper. Cook for 30 minutes, stirring occasionally. Add bread crumbs and continue cooking for 15 minutes.

In another heavy skillet, heat butter. Add eggs and cook briskly, stirring gently with a fork, until eggs are set. Stir in mixture from other skillet. Garnish with fried French bread slices. Serve hot.

Comments: "Piperade" is a very special kind of omelet which is made in a variety of ways, in the whole South of France. Its popularity is spreading a little more every year and has recently reached as far north as Paris.

Suggested Wine: A chilled dry white wine: Bordeaux Graves; etc.
