Ingredients:
Amount Ingredient
6 x eggs
30 gm butter
2 tbl vegetable oil
1 tsp garlic, crushed
3 x onions, medium
1 x red capsicum
1 x green capsicum
3 x tomatoes
1/10 tsp paprika, sweet
1 tsp parsley, chopped
1 tsp basil, chopped
1/2 tsp sugar (caster)
Instructions:
Instructions: Dice onions, capsicum and tomatoes.

Heat oil in a fry pan and saute garlic, onion and capsicum until soft. Add tomatoes, sugar, spices and herbs and cook a furthur 3 minutes, season.

Beat eggs together and add to onion/tomato mixture. Mix well as if you are cooking scrambled eggs. Cook over low heat for 2-3 minutes, stirring, until mixture just begins to set.
