Instructions: Dice all ingredients, any size you like; I personally prefer to chop them very small. Saute garlic in hot olive oil in a frying pan; before it gets any colour, add onion and peppers. Stir a couple of times with a wooden spoon on low heat. When it starts getting soft, add courgettes, let it cook for a few minutes and add the tomatoes.
Bring to boil and turn off heat. Voila, its ready to serve. Some like to boil it for longer, but if you do, you spoil the vitamin content, colour, texture and taste. Its delicious served with croutons previously rubbed with garlic. Optional: At this point, you can stir in a couple of eggs. Its not advisable to warm up after you have added the eggs. You can also serve pisto with fried eggs, but this doesnt qualify for healthy food, I guess. * Manchego, meaning its particular to the La Mancha region (those of you who have read Cervantes Don Quixote will be probably be familiar with the area; for those who havent, the regions in the center of Spain) Well, thats all folks; cheers!
