Instructions: Preheat oven to 375 F. Spray med nonstick skillet w/ cooking spray; Heat over med heat until hot. Add chicken; cook & stir 6 mins or until browned & no longer pink in center. Remove chicken from skillet. Spray skillet again w/ cooking spray,
add bell pepper, mushrooms, onion, garlic, basil & oregano. Cook & stir over med heat 5-7 mins or until vegetables are crisp tender. Return chicken to skillet; stir well. Place spinach on top of pita breads. Divide chicken & vegetable mixture evenly, spoon over spinach leaves. Sprinkle evenly w/ mozzarella & parmesan cheese.
