Instructions: Butter a large shallow ovenproof dish. Wash and pat dry the fish.
Season it on both sides with the pepper and lay it out in the dish. Pour the wine and lemon juice round the fish and sprinkle with the finely grated cheese. Have the ovenshelf on the floor of the roasting ovenslide in the dish of fish and bake for 15 to 20 minutes until the fish is cooked and a light golden brown. Use a finely grated mature cheese such as sbrinz or parmesan for the best taste and appearance. The plaice can easily be replaced with lemon or dover sole; whichever is used it needs to be in thin fillets. Serves 4 Email this Recipe:
