Instructions: Mix dry ingredients. Beat eggs with buttermilk and oil. Add to dry ingredients. Mix, leaving mixture slightly lumpy. Fill well-greased muffin tins two-thirds full. Bake at 425 degrees F. for 15-20 minutes, or until brown. (Overmixing makes tough muffins.) VARIATIONS:
Blueberry: Fold in 1 cup fresh blueberries you have tossed with 1 tablespoon flour and 1 teaspoon grated orange or lemon rind (opt.). Bran: Add 3/4 cup Nabisco All-Bran cereal (for Raisin Bran, add in 1/2 cup raisins). Cinnamon-Apple: Add 3/4 cup finely chopped apples. Mix 2 tablespoons sugar and 1/2 teaspoon cinnamon and sprinkle on top of each muffin before baking. Email this Recipe:
