Amount Ingredient
10 cup Water
1 x Onion, peeled and chopped
1 x Leek (or 2nd onion) trimmed, and halved, washed free of sand
4 x Carrots, scrubbed and chopped
4 x Celery stalks, chopped
1 cup fresh parsley, finely-chopped
2 med zucchini, scrubbed and chopped
1 bn spinach, cleaned well
1/4 tsp Marjoram
Salt to taste
Pepper to taste
Instructions:
Instructions: Place all the ingredients in a large pot and bring to a boil. Reduce heat, cover pot, and simmer for 3 hours. Strain mixture if you prefer a clear broth, if you leave vegetables in broth, you have a simple vegetable soup. Serve hot.
