2 x ripe plantain, peeled
1/4 cup vegetable oil
salt and freshly ground pepper

2 tbl vegetable oil
1 tbl grated ginger
1 cup chopped onions
3 cup cooked rice
2 tbl soy sauce
1/4 cup slivered green onions
salt and freshly ground pepper
Instructions:
Instructions: Slice plantains into 1/2-inch thick rounds. Heat 1 tablespoon oil in skillet on medium heat. Add plantain slices in batches and fry about 1 minute per side or until browned, adding more oil as needed. Remove, drain on paper towels and when cool place between two sheets of wax paper and with a rolling pin, roll them 1/4-inch thick.

Reheat oil and fry again until browned on both sides and slightly crisp.

Set aside, season with salt and pepper and dice when cool.

Heat 2 tablespoons oil in skillet, add ginger and onions and stir-fry for 2 minutes, add rice and cook until heated through. Stir in soy sauce and stir-fry until rice is coated with soy. Stir in green onions and plantains and cook until flavors are blended, about 1 minutes. Season with salt and pepper. Sprinkle with coriander.
