1/4 cup margarine or butter, softened
1/4 cup sugar
1 tsp vanilla
1 x egg
1 cup Pillsbury BEST All Purpose Flour, or Unbleached Flour
1/2 tsp baking powder
1/4 tsp salt
8 x ripe plums, pitted & sliced*
2 tbl sugar
1/2 tsp cinnamon

1 cup powdered sugar
1/2 tsp vanilla
Instructions:
Instructions: Originating in Germany, a kuchen (pronounced koo-ken) is a fruit or cheese-filled cake. Kuchens are often served for dessert but also make exquisite coffee cakes for breakfast or brunch. This plum version is lower in fat and luscious!

Heat oven to 400 degrees F. Spray 9-inch spring-form pan with nonstick cooking spray. In large bowl, beat margarine and 1/4 cup sugar until light and fluffy. Add vanilla and egg; beat well. Lightly spoon flour into a measuring cup; level off. In small bowl, combine flour, baking powder and salt. Gradually add to
margarine mixture, mixing well. With floured fingers, press dough over bottom and 1 inch up sides of spray-coated pan. Arrange sliced plums over dough. Combine 2 tablespoons sugar and cinnamon; sprinkle over plums.

Bake at 400 degrees F. for 15 to 20 minutes or until edges are golden brown. Cool 10 minutes; remove sides of pan. Meanwhile, in small bowl combine all glaze ingredients, adding enough milk for desired drizzling consistency; blend until smooth. Drizzle over warm kuchen.

TIPS:
*Two 16-oz. cans purple plums, well drained, pitted and cut in half, can be substituted for fresh plums. A 13x9-inch pan can be substituted for the spring-form pan. Press dough in bottom of spray-coated pan. Continue as directed above.
