2 x Red mullet fillets
2 x Chorizo sausages, sliced
3 x Ripe plum tomatoes, sliced
3 x Thinly-sliced red shallots
Pesto sauce
----------------- SAFFRON SAUCE ----------------
Saffron
1 tsp Crushed garlic
Yolk of one egg
4 tbl Warm mashed potatoes
Instructions:
Instructions: To make the sauce, mix the egg yolk with the warm mashed potato, garlic, a pinch of saffron and the olive oil.

Season the red mullet fillets and then place thin slices of the chorizo on top. Pop this under the grill. Put a circle of tomato slices on to a plate and pour the saffron sauce in the middle.

Add some salad if you like, put the grilled fish and sausages on top and finish with some pesto sauce.
