Instructions: To make the sauce, mix the egg yolk with the warm mashed potato, garlic, a pinch of saffron and the olive oil.
Season the red mullet fillets and then place thin slices of the chorizo on top. Pop this under the grill. Put a circle of tomato slices on to a plate and pour the saffron sauce in the middle.
