Instructions: Lace the plums in a shallow pan sprinkle over 2 level tbsp caster sugar and cook on the simmering plate stirring occasionally for 3 to 4 minutes then transfer to the simmering oven until the plums begin to soften.
Meanwhile using a large plain cutter or upturned tumbler as a guide cut the fruit or cinnamon bread into circles. Beat together the egg and the milk. Heat the butter in a nonstick frying pan on the boiling plate. Dip the bread into the egg mixture making sure it is well coated. Once the butter is hot add the bread and sprinkle with 1 level tbsp of the caster sugar. Fry until golden underneath loin over and sprinkle with remaining 1 level tbsp sugar fry until golden on the other side. Repeat with the remaining slices of bread. Place the cooked fruit bread on a plate then top with the warm plums and a spoonful of greekyogurt. Make sure you choose ripe fruit as it will be sweeter and have a better flavour which means you can cut down on sugar. Alternatively buy the fruit a few days in advance and keep in a dark warm place to ripen further A ripe banana gives off ethylene gas which helps other fruit ripen so try adding one to the fruit bowl. You can also use four tea cakes for this recipe. Just split them in half and add a tittle mixed spice to the egg mixture. This simple to make dish is also perfect for a special breakfast.
