Instructions: *NOTE: I used about 10 - 12 small to med-sized fresh basil leaves. Wash and cut into very thin slices.
I poached the chicken in the chicken broth and thinly sliced leek for about 15 min or till done. When the chicken was poached I removed it, discarded the liquid that was left in the electric skillet, and cut the chicken into bite-sized pieces. Put it in the refrigerator to cool. While it was cooling I cut into bite-sized pieces all the fruit and cut the basil into very thin strips. Toss well in a serving bowl. After the chicken has cooled add to the fruit in the serving bowl and toss to mix. This was very good on a warm summer evening. Email this Recipe:
