1 kg fish fillets
100 gm lettuce, mixed
12 x olives, black

1/2 cup mayonnaise
2 x anchovy fillets
2 tsp garlic, crushed
1 tbl lemon juice
1 tbl parsley, chopped
salt, pepper
1 x onions, medium
Instructions:
Instructions: Dressing:
Finely dice onion.

Place all ingredients in a bowl and mix well.

Poach fish gently and allow to cool in liquid.

Dice or flake the fish into 2.5 cm cube pieces, add dressing and mix gently to combine.

Line the edge of a shallow salad bowl with mixed lettuce leaves and arrange fish in center.

Decorate with olives.
