3 cup water
1 tbl salt
Juice of 1/2 lemon
1 lb fresh asparagus trimmed
1 tsp olive oil
Instructions:
Instructions: For Asparagus: Over high heat, bring bring water and a pinch of salt to a boil. Add asparagus and boil for 2 minutes (water should just cover asparagus). Remove asparagus from water and set aside.

For Halibut: In a medium saucepan over high heat, bring water, salt and lemon juice to a boil. Next, place halibut filets in boiling water and turn heat down to medium. Poach for 7 to 8 minutes. Remove from water, drain, place on serving plates and top with cooked asparagus. Drizzle lightly with olive oil and serve.

This recipe yields 4 servings.
