1 cup	Water
1/2 cup	White wine
2 tbl	Chopped onion
2 tbl	Chopped celery
2 x	Peppercorns
1/2 tsp	Salt
1 x	Bay leaf
1/2 tsp	Tarragon
1/4 tsp	Thyme
1 lb	Oreo dory fillets

Instructions:

Instructions: In skillet, place all ingredients except fish & lemon wedges. Bring to a boil; cover, reduce heat & simmer 30 minutes. Add fillets in single layer, cover & poach 2 minutes. Remove to warm platter & serve with lemon wedges.
