Instructions: Peel pears and core from bottom. Slice small piece off bottom so pears can stand upright. Place in bowl of cold water with the juice of half a lemon.
Bring cider, cinnamon, vanilla and ginger to a simmer. Add pears and simmer covered for 15 minutes or until just tender. Remove pears to a platter. Bring cider to a boil and reduce to a syrupy consistency about 1 1/2 cups. Remove vanilla, cinnamon and ginger, and pour glace over fruit. Allow to cool to room temperature and garnish each pear with mint. This recipe yields 6 servings. Email this Recipe:
