Instructions: Put the sugar and water in a heavy bottomed pan and bring slowly to the boil with the lemon ginger and vanilla pod.
When the sugar has dissolved add the sliced star fruit and turn down the heat to a gentle simmer. Cook until the fruit is tender about 15 minutes depending on the ripeness of the fruit. Leave to cool slightly before spooning into a suitable serving dish. Serve warm rather than hot with balls of vanilla ice cream. Serves 4 Email this Recipe:
