1 x recipe firm Basic Polenta (see accompanying recipe)
2 tbl butter
2 tbl all-purpose flour
1 cup plus 2 tablespoons milk
1/2 tsp salt or to taste
Freshly ground black pepper to taste
1/8 tsp freshly ground nutmeg
1/2 cup crumbled gorgonzola cheese (divided)
Instructions:
Instructions: Preheat the oven to 350 degrees. Pour the cooked polenta onto a wooden or marble board or into a jellyroll pan. Let cool. Cut the polenta into slices; put slices inside a lightly buttered baking dish. Set aside.

Heat the butter in a saucepan over moderate heat. When the butter has melted and looks foamy, add the flour and cook 2 to 3 minutes, stirring constantly. Add the milk gradually, stirring the mixture with a whisk. Cook about 3 minutes or until sauce has thickened. Add salt, pepper, nutmeg and all but 2 tablespoons cheese. Stir until cheese has melted into the sauce. Remove from the heat. Pour the sauce over the polenta slices. Bake for 15 minutes.

Sprinkle walnuts and remaining 2 tablespoons cheese on top and bake another 10 to 12 minutes.
