Ginger dressing: ----------------
2 tbl lemon juice
1/2 tbl white wine vinegar
1 x clove garlic, chopped finely
1 tsp freshly grated ginger or a generous 1/4 teaspoon ground ginger
1 tsp granulated sugar
1/4 tsp salt
1/8 tsp freshly ground black pepper
1/4 cup olive oil
----------------- Salad: ----------------
1 med pomegranate
2 x heads endive, separated into leaves
1 med papaya, peeled, seeded and cut into 1/2 inch cubes
3 qt baby lettuce or other torn lettuce leaves (12 cups)
Instructions:
Instructions: To make dressing: Mix lemon juice, vinegar, garlic, ginger, sugar, salt and pepper; whisk in oil. Reserve.

To make salad: Separate seeds from skin and pulp of pomegranate; reserve seeds (about 3/4 cup).

On a large serving platter, arrange endive leaves like spokes with tips pointing out. Toss papaya with 1 tablespoon dressing; reserve. Toss lettuce with remaining dressing; mound over endive leaves. Top with reserved papaya; sprinkle with pomegranate seeds, then with green onions.
