Instructions: In a large bowl, combine the beef and salsa, mixing well. Shape into 4 thin patties. Place one stuffed pepper in the center of each patty; wrap the beef around each pepper to enclose, sealing the seams and forming balls. Flatten the balls into patties about 1 inch thick.
In a large skillet, cook the burgers over medium heat for 16 to 20 minutes, or until no pink remains in the beef, turning occasionally. Spread 1 tablespoon salsa con queso over the top of each burger. Sprinkle evenly with tomato and olives. Serve immediately. This recipe yields 4 servings.
