Made with vegetable oil, these crisp, tender cookies are just sweet enough,
with the subtle flavor only poppy seeds can provide.
1 cup all-purpose flour
1/4 tsp salt
1/4 cup poppy seeds
3 x eggs, at room temperature
1/2 cup granulated sugar
1 tsp vanilla
Instructions:
Instructions: In a bowl, thoroughly combine flour, salt and poppy seeds; set aside.

Preheat oven to 350 degrees.

In mixer bowl, beat eggs at high speed until thick and light-colored.

Gradually beat in sugar, then vanilla. Beat in oil until well-combined.

Gradually beat in flour mixture until smooth and well-blended.

Drop by generous teaspoons, about 2 inches apart, onto well-greased baking sheets. Bake until cookies brown around edges (12 to 14 minutes). Carefully remove at once to wire racks to cool.
