7 x apples tart
1 tbl lemon juice
1 cup sugar
3 tbl tapioca
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt

Preheat oven to 450 deg F. Prepare a 2-crust pastry. Set aside top crust.

Wash, core, peel and thinly slice the apples. Place in a bowl and sprinkle with lemon juice. Mix together the sugar, tapioca, cinnamon, nutmeg and salt. Add sugar mixture to apples and toss lightly.

Turn out filling into bottom crust. Dot with butter. Moisten edge of crust and place top crust. Gently press the two edges together. Tuck under any extra pastry to even with pan. Flute as desired.

Cut slits into top crust and insert a metal funnel in the center to allow steam to escape.

Bake at 450 deg F for 10 minutes. Reduce oven temperature to 350 deg F and bake about 40 minutes or until crust is lightly browned.
