1/4 cup butter
1/4 cup flour
1 tsp salt
2 cup milk
1 lb Velveeta cheese
1/2 cup sour cream
4 cup new potatoes, peeled & thinly
sliced
2 med onions, thinly sliced
3/4 cup green pepper, coarsely chopped
salt & pepper, to taste
6 x center cut pork chops, 3/4 inch thick
1/4 cup flour
Instructions:
Instructions: Preheat oven to 375 degrees. Melt butter in a medium saucepan over moderately low heat. Blend in flour, salt, and pepper. Gradually add milk and cook, stirring constantly, until thick and smooth. Add cheese and stir until melted. Combine slightly cooked cheese sauce and sour cream.

In a shallow 2 quart casserole dish, alternate layers of sliced potatoes, onions, green peppers, and the cheese mixture. Sprinkle each layer of potatoes lightly with salt and pepper. Bake uncovered for 30 minutes.

Thoroughly coat pork chops coated with flour. Heat oil in a large skillet over moderately high heat. Place pork chops in skillet and brown evenly on both sides. Remove casserole from oven and stir potatoes. Sprinkle both sides of pork chops with salt and pepper. Place over potatoes.

Cover casserole and return to oven for 1 hour and 20 minutes.

Yield: 6 servings.
