Ingredients:

4 x pork chops
----------------- MARINADE ----------------
1/2 cup olive oil
2 tbl granulated garlic
1 tbl freshly-ground black pepper
2 tbl lime juice
2 tbl sugar
1/4 cup water
----------------- CHIPOTLE SAUCE ----------------
3/4 cup honey
1/4 cup water
4 tbl mustard
1 tbl minced Chipotles
1 tsp ground cumin
1 tsp paprika
1 tbl granulated garlic
1 tsp allspice
1/2 cup cilantro chopped
Instructions:
Instructions: Combine all marinade ingredients. Marinate the chops in a Ziplock bag for several hours before cooking.

To cook, place the chops over medium heat for around 10 minutes per side or until a meat thermometer reads 150 degrees.

For the Chipotle Sauce: Place everything in a saucepan and cook over low heat for 15 minutes. Stir and serve.

This recipe yields 4 servings.

Comments: Pork goes with just about anything, so here is a little Southwestern twist for something different for that summer afternoon BBQ. Chipotles are jalapeno peppers that have been smoked. They are available in cans in most large grocery stores or you can smoke them yourself on your backyard grill.
