4 x boneless pork chops (8-9 oz. ea.)
1 x clove garlic crushed
1 tbl butter
4 tbl Dijon mustard
1 cup apple cider or juice
----------------- For the compote ----------------
3 lrg apples cored and cut into wedges
1 tbl butter
1 tbl lemon juice
1/2 cup brown sugar
1 x cinnamon stick
1 cup sherry
Instructions:
Instructions: Rub pork chops with crushed garlic. Saute chops in butter until brown. Brush with mustard on both sides. Add cider and cover. Cook until chops are done.

To make compote, saute apples in butter and lemon juice. Add brown sugar and cinnamon stick. Add sherry and cook until sauce cooks down and becomes concentrated. Season to taste with salt and pepper.

To serve, place pork chops on warm plate. Spoon sauce and compote on top of chops.
