4 x Pork loin chops
3 x Firm peaches
1/2 x Yellow onion
2 x Shallots
1 x Garlic clove
2 tbl Olive oil
3 tbl Apple juice
Salt and pepper
Instructions:
Instructions: Season pork chops with salt and pepper. In bowl of food processor place chopped peaches, yellow onion, shallots and garlic. Pour in 1 tablespoon olive oil and apple juice. Season with salt and pepper and process until well blended. In large skillet, heat remaining 1 tablespoon oil over medium heat. Add peach-onion mixture and sliced peaches. Saute 2 minutes. Stir often. Remove all but about 2 tablespoons mixture from skillet. Turn heat up and add chops. Cover and cook about 10 minutes. Turn chops halfway through cooking time. Add peach-onion mixture back into pan with chops and add brandy. Simmer 2 minutes. Adjust seasoning if desired.

Approximately 10-20 minutes.
