Ingredients:

2 tbl All-purpose flour
1 tbl Chopped fresh sage
4 x Lean boneless pork chops Trimmed of excess fat
2 tbl Olive oil
1 tbl Butter
2 x Red onions sliced into rings
1 tbl Lemon juice
2 tsp Superfine sugar
4 x Plumed tomatoes, quartered
Instructions:
Instructions: Mix the flour, sage,and salt and pepper to taste on a plate. Lightly dust the pork chops on both sides with the seasoned flour. Heat the oil and butter in a skillet. Add the chops and cook them for 6-7 minutes on each side until cooked through. Drain the chops, reserving the pan juices, and keep warm.

Toss the onion in the lemon juice and fry along with the sugar and tomatoes for 5 minutes until tender. Serve the pork with the tomato and onion mixture.
