6 x lean boneless pork chops - (6 oz ea)
Caribbean Spice Rub (see recipe)
Vegetable cooking spray as needed
Instructions:
Instructions: Rub pork evenly with Caribbean Spice Rub. Place on a broiler rack coated with cooking spray, and place rack in broiler pan.

Broil 5 inches from heat 5 minutes on each side or until done. Serve with Warm Pineapple Salsa.

This recipe yields 6 servings

Comments: Enjoy with a side of thinly sliced green beans and fluffy couscous or brown rice. Drizzle with "Roasted Red Pepper-Dill Dressing" (see recipe) for extra color and even more tangy flavor.
