Instructions: Peel and core apples, and chop into small chunks.
Melt butter in a small pan, add apple and sage leaves, and cook very gently, covered, until apples are soft, stirring from time to time. Using a whisk, stir in lemon juice, nutmeg and salt, breaking up the apples into a mush. Heat oil and gently fry crumbed pork chops until golden on both sides.
