Instructions: Place pork knuckles in a large saucepan with onions, carrots, vinegar, bay leaf and clove. Cover with water and bring to a boil. Cover and simmer for 45 minutes. Drain the meat, retaining the vegetables, bay leaf and clove.
Brush meat with butter and place in a large braising dish. Add vegetables, herbs, apple slices and apple juice. Cover and bake at 350 F degrees for about 2 hours until the pork is very tender. Serve with vegetables and a little of the cooking liquor (which may mixed with cranberry jelly, reheated and poured over the meat), and potatoes dumplings and red cabbage. Email this Recipe:
