Instructions: Place roast, fat side up, on rack in open roasting pan. Insert meat thermoneter in the thickest part. Make certain bulb does not rest in fat or on bone. Do not add water.
Roast in preheated 325 degree oven until the thermometer registers 180 degrees. Waatch in closely. Allow 30 to 35 minutes per pound for a center loin roast, 40 to 45 mminutes per pound for smaller blade or sirloin roast. Serve with Berry Sausage Dressing Email this Recipe:
