1 x 5 pound pork loin, rib in
2 tbl butter
2 x sweet apples, peeled and chopped
----------------- Marinade: ----------------
1/2 cup apple cider
1/2 cup dried sour cherries
4 tbl apple butter or sweetened applesauce
2 clv garlic, minced
1/2 cup Riesling wine
1 lrg sweet onion, finely chopped
freshly ground black pepper
8 x sprg fresh thyme
1 x bouquet garni (recipe follows)
----------------- Bouquet Garni: ----------------
6 x juniper berries
2 x bay leaves
4 x allspice berries
Instructions:
Instructions: To make bouquet garni: Place all ingredients in small pieces of cheesecloth and tie together with butchers twine, leaving 6 inches of twine at one end. In large saucepan, over high heat, combine all marinade ingredients, adding bouquet garni last, (ensuring long end of twine hangs over pan for easy removal). Bring mixture to a boil; reduce heat to medium. Simmer, uncovered, about 20 minutes. Remove bouquet garni; strain remaining ingredients and reserve.

Season pork loin with salt and pepper. Over medium-high heat, roast on barbecue rotisserie about a 2 hours or until cooked to your liking. Baste frequently with marinade.

In medium saucepan heat 2 tablespoons butter. Increase heat to high and add apples.

Saute 4 minutes or until just tender. Add reserved ingredients and remaining marinade.

Reduce heat to low and simmer about 5 minutes. Remove from heat and serve with pork.
