1 lb pork loin
8 oz meat from small pigs head
2 cup salted water
1/4 cup cooking oil
5 x shallots diced
2 x garlic cloves crushed
1/2 cup finely-chopped wood ear mushrooms
3 tbl whole black peppercorns
1/4 cup sesame seeds toasted
2 x eggs beaten
1 lrg banana leaf
3 tbl fish sauce (nuoc mam)
Instructions:
Instructions: Boil pork and pigs head in salted water for 20 minutes, drain and de-bone; cut into small cubes.

Heat oil in a large frying pan, cook shallots and garlic until soft. Add pork, mushrooms and peppercorns. Cook, stirring until mushrooms are soft; finish with sesame seeds. Remove from heat, stir eggs through pork mixture.

Place mixture on the banana leaf, wrap and tie with a string. Steam for 2 hours (above boiling water). Unwrap and slice thinly. Serve with fish sauce and lime wedges.

This recipe yields 4 servings.
