FOR THE CILANTRO SALSA ----------------
1 cup chopped cilantro
1/2 x poblano chile, roast, peel, & seed
1 x clove garlic
1/2 tsp ground ginger
2 tbl fresh lime juice
1/2 tsp salt
----------------- FOR THE PORK SCALOPPINE ----------------
2 tbl olive oil
1/2 tsp chopped fresh parsley
1/4 tsp ground white pepper
1/2 x poblano chile, roast, peel, seed &
dice
8 x pork scaloppine, 1/8" thick
----------------- GARNISH ----------------
1 x Thin lemon slices
Instructions:
Instructions: To prepare the salsa:
Put all its ingredients in a food processor fitted with a steel blade and process just until finely chopped. Do not over process.

To prepare the scaloppine:
Heat the oil in a large frying pan. Add the parsley, pepper, and poblano and stir. Then add the pork and saute for 1 to 2 minutes on each side or until just done. Do not over cook or they will become tough. Arrange on plates and garnish with lemon slices and parsley Serve with the cilantro salsa on the side.

SERVING SUGGESTIONS: This dish is excellent with pasta primavera, rice, or sweet potatoes cooked in their jackets. The cilantro salsa also makes a good accompaniment to broiled fish.
