950 gm Pork Round Roast
salt and black pepper, to taste
1 cup English spinach, finely chopped
1 tbl black olive paste
1 tbl almonds, chopped
1 tbl butter
Instructions:
Instructions: Preheat oven to 180C. Cut a pocket into the thickest part of the roast.

Season with salt and pepper. Steam or microwave spinach, remove excess moisture and combine with olive paste, nuts and pepper. Firmly pack seasoning into pocket. Heat butter and oil in frypan, quickly sear and brown meat. Remove to rack in baking dish. Bake for 30 minutes per 500g of pork. Allow to rest for 10 minutes. Carve and serve with pan tossed green and yellow beans in butter, roasted potatoes and caramelized red onions.

Cooking Time: Allow 30 minutes per 500g
