Instructions: Process the first 8 ingredients in a food processor until smooth. Cut the pork and toss well with the marinade and chill.
Thread 2 to 3 pork strips onto a soaked skewer. Place on a grill for 2 to 3 minutes each. For the Peanut Sauce: Dissolve the coconut in 2/3 cup boiling water. Put the remaining ingredients into a saucepan over high heat and bring to a boil, stirring constantly, then simmer for 5 minutes. Serve the skewers over the rice with the sauce on the side for dipping, or pour the sauce over the skewers. This recipe yields 8 skewers. Yield: 8 skewers Email this Recipe:
