Ingredients:

FOR THE SAUCE ----------------
2 tbl Oil
1 cup Minced onion
2 lrg Garlic cloves minced
Salt to taste
Freshly-ground black pepper to taste
1 can Whole tomatoes - (16 oz) pureed with liquid
1/3 cup Tomato paste
1 cup Chicken broth
2 x Poblano chiles roasted, peeled,
seeded and diced
Sugar to taste
----------------- FOR THE TAQUITOS ----------------
3 cup Shredded cooked pork
8 x Steamed fresh corn tortillas
1/2 lb Shredded white cheddar
Cilantro sprigs to taste
Sour Cream to taste
Instructions:
Instructions: In a saucepan set over moderate heat cook oil until hot. Add onion, garlic and salt and pepper and cook mixture, stirring, until translucent. Add tomatoes, paste, broth, chiles, sugar and salt and pepper to taste, bring sauce to a boil and simmer, covered, for 15 minutes.

In a bowl, combine the pork with enough of the sauce to lightly coat. Divide the filling among tortillas, top with the garnishes and roll up.

This recipe yields 8 servings.
