1 lb port tenderloin, trimmed of fat
1 x recipe Marinade for Pork Tenderloin (recipe follows)
2 cup red cabbage, shredded
1 lb small red potatoes, quartered
2 x red apples, cored and sliced
Instructions:
Instructions: Toss the tenderloin with the Marinade for Pork Tenderloin. Marinate for 2 hours, rotating often. In a Baking dish, layer the remaining ingredients. Place the pork tenderloin over the layered vegetables. Pour the marinade over the pork and vegetables. Cover the dish with foil or a tight- fitting lid. Bake at 350 degrees for 1 hour and 5 minutes. To serve, slice the tenderloin in rounds.

Spoon the pan juices over the meat and vegetables.
