Ingredients:

1/2 lb pork tenderloin cut 1" chunks
1 med onion chopped
1 sm green bell pepper diced
3 x garlic cloves minced
1 can diced tomatoes - (28 oz) undrained
1 can black beans - (15 oz) rinsed, drained
1 cup low-fat low-sodium beef broth
1 tbl chili powder
1 tsp ground cumin
1/4 tsp ground red pepper
----------------- OPTIONAL SEASONING ----------------
Salt to taste
Instructions:
Instructions: 1. In a soup pot, saute the pork over high heat for 8 to 10 minutes. Add the onion, bell pepper, and garlic, and saute for 5 minutes.

2. Add the remaining ingredients; mix well and bring to a boil. Reduce the heat to medium-low and simmer for 30 to 35 minutes.

This recipe yields 6 servings.
