2 x pieces pork tenderloin trimmed of silver fat
1/2 lb italian or bulk sausage
1/2 x onion chopped fine
4 x mushrooms chopped fine
1/2 x carrot chopped fine
salt & pepper to taste
egg & 1/2 tsp. water mixed
olive oil
Instructions:
Instructions: Season tenderloin and brown all sides in olive oil (approx. 3 min./side) let cool - brown sausage; breaking up with fork - drain off grease - add onion, mushrooms & carrot and cook 2-3 minutes - let cool.

Flour and roll out pastry large enough to wrap around meet (approx. 1 1/2 times size) - place pork in center of pastry & top with sausage mixture - brush egg mixture on all edges of pastry & fold over meat to meet on top - trim if reqd. & press to seal - trim edges square & press to seal adding more egg wash as reqd.

Turn over with seem on bottom and use trimmed scraps to decorate - brush pastry with egg wash.

Place in preheated 400
* oven on a pizza stone or cookie sheet for 20 minutes or until brown.

Slice cross ways 1 in. pieces and serve with gravy.
