2 tsp chili powder
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp paprika
1/4 tsp salt
1/4 tsp ground black pepper
8 x pork loin chops
1 tsp olive oil
Vegetable cooking spray
1/2 cup salsa
1/4 cup apricot preserves
4 cup nectarines - sliced
Instructions:
Instructions: Combine first 6 ingredients; rub mixture over both sides of pork. Heat oil in a large nonstick skillet coated with cooking spray over medium high heat. Add pork; saute 2 minutes on each side or until done. Remove from pan and keep warm. Add salsa and preserves to skillet and bring to a boil. Cook 1 minute. Stir in the nectarine slices and cilantro. Cook mixture 1 minute. Serve salsa with pork.
