Instructions: Beat the oil with the vinegar port wine and salt and pepper to taste until well blended. Alternatively place all the ingredients in a screwtop jar or bottle and shake vigorously to blend.
Add the tarragon if used just before serving mixing or shaking well to combine. This is the perfect festive season dressing for Christmas and Thanksgiving. Use it on crisp lettuce or melon salads.
