Instructions: Drain pineapple and set aside. In wok or medium saucepan, bring pineapple juice to boil. Add onion, pepper, raisins, vinegar, ketchup, soy sauce and brown sugar. Reduce heat and simmer 5 minutes. Add pineapple and chicken and simmer 1 minute. Add the snow peas and simmer 30 seconds. Add cornstarch and cook 1 minute, or until mixture has thickened and is translucent. Refrigerate until ready to pack; keep chilled with an ice pack.
