Instructions: Heat skillet. Cover bottom of pan with oil and add diced mushroom and onion.
Cook over medium-high heat for about 8 minutes to partially cook mushrooms. Wash, peel and grate potatoes. In a large bowl, mix grated raw potatoes and cooked onions and mushrooms. Drop by large spoonfuls onto an oiled griddle or large skillet. Each potato patty should be about 3 inches in diameter. Brown on each side until golden. Drain on paper towel. Place cooked patties covered in foil in a 150-degree oven to keep warm, while continuing to cook remaining patties. Serve immediately. This makes a nice side dish for dinner or a tasty brunch dish.
