Instructions: Heat the oil in a large nonstick pan, add mushrooms caps, gill sides up, sprinkle the mushrooms with the rosemary and garlic powder and cook 5 minutes. Add 1/4 cup of water to the pan, then turn the mushrooms and cook another 2 minutes, or until they are tender.
Meanwhile, split the muffins and top each half with 1 tablespoon of the feta. Place in the toaster oven or under the broiler and toast until the feta is melted. Place a mushroom cap and 1 slice of roasted pepper on 4 muffin halves. Top with other halves. Makes 4 servings. Serve carrot and celery sticks with this. Email this Recipe:
