Instructions: Also, my hubby, who is trying very hard not to require meat at each meal, gave rave reviews to the roasted red pepper and portobello sandwiches we had for dinner last night, so I just wanted to remind everyone that portobellos do make a nice meat substitution once in a while. Just brush them with balsamic vinaigrette, and broil for a few minutes on each side, until they start giving up juice. Broil a slice of red onion while youre at it, and serve with roasted red pepper and spicy mustard on a good roll.
We had regular macaroni and cheese, made with skim milk and no butter-it taste s fine that way to us. We also add a little fresh ground pepper to it. Email this Recipe:
