Instructions: Scald possum in boiling water containing a half cup of lime or ashes.
Scrape until hairless, and gut. Remove musk glands under the forearms and remove the head. Parboil possum in water with red or black pepper to taste. Boil until tender. Put into a greased pan surrounded by sweet potatoes. Bake until golden brown (about 2 hours in a wood stove). Email this Recipe:
