Instructions: The homemade bran muffins I made were off the box of Post Natural Bran Flakes.
Apparently the recipes vary from box to box (the last box I had was for orange bread) but post was having a big campain with lots o coupons for bran flakes, so I got some. (I used applesauce instead of the oil, but if you are hung on using oil, use the same amount.) Heat oven to 4-F. Mix flour, brown sugar, baking soda, cinnamon and salt in large bowl. Beat egg whites in small bowl; stir in milk and applesauce. Add to flour mixture; stir just until moistened (will be VERY lumpy.) Stir in cereal and raisins. Spoon batter into greased (i.e. Pamed) muffin pan, filling each cup 2/3 full (I actually had to use 1 1/2 muffin pans.) Bake until golden brown. They were pretty good, and although better warm, good cold. Very filling. free advertising. =-) ) Email this Recipe:
