2 cup nonfat chicken broth
1/2 tsp salt
1/4 tsp ground black pepper
1/4 cup dry sherry
2 tsp Cornstarch
12 oz evaporated skim milk
1/2 cup grated parmesan cheese
1 tsp fresh lemon juice
2 cup skinless turkey light meat cooked
1 lb noodles cooked
Instructions:
Instructions: 1. PLACE STOCK IN A SAUCEPAN OVER MEDIUM-HIGH HEAT. ADD THE SALT, PEPPER, AND SHERRY AND BRING TO A BOIL, THEN REDUCE THE HEAT TO A SIMMER.

2. COMBINE THE CORNSTARCH AND CANNED MILK AND STIR UNTIL THE CORNSTARCH IS DISSOLVED. SLOWLY ADD IT TO THE SIMMERING LIQUID, STIRRING CONSTANTLY WITH A WIRE WISK. CONTINUE TO STIR UNTIL SLIGHTLY THICKENED. REMOVE FROM THE HEAT AND ADD THE CHEESE, LEMON JUICE, AND CHOPPED TURKEY. MIX WELL AND COVER TO KEEP WARM.

3. TOSS THE PASTA WITH THE OIL (NOT NECESSARY). PLACE 1 C OF PASTA ON EACH OF EIGHT WARM PLACES. TOP EACH SERVING WITH 1/2 C OF THE SAUCE MIXTURE. (IM LAZY, I JUST MIXED IT ALL TOGETHER ;-)

P.S. I ALSO ADDED SOME FROZEN PEAS - WARMED AND DRAINED, and I used chicken breast cut up in small pieces and browned.
